Mini Masters for My Little Lion

A very jolly hello to all my beautiful readers! I know it has been a while since I have last posted, but with the holidays just around the corner, it seems everyone is trying to get everything packed into the month of December! So I thought I'd keep this post short and simple. But considering I talk a lot and compose many of my own thoughts through this blog, I cannot promise you a short one :) For almost a year now, I have been told about the art classes they offer at the Dixon Gallery and Gardens for children ages 2-4, and up until recently we always had something to do at that time whether it was Little Gym, school or appointments. And so, yesterday I made sure we had nothing to do during the time of 10:30-11:15. This month's theme, the Mini Masters are focusing upon the holidays and gift giving, which is why it came to no surprise we were making ornaments, or " balls" as they call them in London. Initially, I was a bit skeptical as to how Layth would perceive the class since they started off with a story, but surprisingly, he loved it! The class consists of a story, an art activity and a snack. All things that would properly engage a toddlers interest. And so, we will definitely be returning should the opportunity reprise itself.
As far as the art activity is concerned, I was just as intrigued as Layth was to partake in it. And so, together we filled the clear glass ornament with fabric paints... and while, most of the other kids were choosing one color, Layth actively choose all four: red, green, blue and yellow. Not to be biased, but I will have to admit our two ornaments were the most original :) Of course, this is where I had difficulty, topping the ornament. I could not properly twist it without allowing any paint to leak, which prompted Layth to say, " Uh-oh, it's dirty". I wish he were referring to my fingers and jeans which were covered in jeans by the end of the project, but he was simply referring to his ornament. Upon completing the ornaments, the kids, including Layth were served juice, gingerbread cookies and grapes...which could not have been more perfect saying those two of Layth's favorite things to eat, fruit and cookies! I will definitely be coming back and recommend it to anyone in Memphis with a toddler :)

P.S. I wish I had pictures to post, but the two ornaments broke over the course of the last two days!

Silpada Jewelry Trunk Show




































Hey!!!
For weeks now, I've been advertising and preparing for a Silpada jewelry show, and the day was finally here. After constantly going back and forth on the phone with Victoria, and adding more and more people to the guest list, it was so exciting to see the jewelry being set up and displayed on my dining room table. As Victoria was setting up each piece of jewelry, my eyes were just widening wondering how I was going to decide on one to pieces: I wanted it all!!! And then when Victoria informed me we could try on any and every piece of jewelry we wanted to, I felt like a celebrity where the jewelry was being brought to me for me to choose. Unlike the celebrities who get to borrow the jewelry, I actually had to buy mine. The show that was only expected to last two hours, ended up going on for 3.5 hours, and the ladies were pleasantly pleased. I think they were also excited to try on all the jewelry and stand in the mirror and feel like a queen being adorned with endless pieces of jewelry. It was such a great way to get all the ladies together, I am already planning another holiday December show! But if anyone is interested in ordering from this show, the link is:

Layth and the Potty

I am just giving an update on our potty training adventures after mentioning we had begun the process a few months ago, and I would like to say, we are almost there minus a few night time accidents every now and then!! It has been an adventure, but one I know every parent must go through! First of all, I would like to give a personal thanks to Evergreen Montessori for assisting in the process by insisting he come to school in underwear and remain in underwear throughout the day, except at nap time where they switch them into pull ups. Pull ups, that is something I have a mixed opinion about since Layth viewed them as a more comfortable diaper. He enjoyed the fact he didn't have to lay flat to have them changed and instead could remove them himself while easily standing up. The only time he would inform me of a possible accident is if they leaked since they are not made to absorb much. Nonetheless, it helped to introduce him to the idea of being wet outside of a diaper. And so, after months of pull ups, I decided to transition him strictly to underwear. I will not lie and say it was easy, it was definitely an adventure from reading his body gestures, to timing when he had his last drink to making sure we put him on any potty we came by, and packing my baby bag with three or four different changes of clothes. I think Layth, himself, enjoyed the adventure because it meant endless treats to be rewarded when he would use the potty, and seeing mommy run in panic each time he would say "pee." Even until this day when he tells me " pee" Layth still gets excited since using the potty has become synonymous with treats. It is just difficult because when he does in fact tell me " pee" it usually implies " mom right now, and no, I can't wait." But anything is better than diapers! It also means less time spent in the women's bathroom, less money spent on both diapers and wipes and more room in my baby bag or in my case, I can actually start carrying a purse again!!

And so, our adventures continue




Hello Everyone,
Since Layth and I are always on the prowl for new afternoon adventures, we decided to take a risk and try the " Paint a Piece" pottery studio in Cordova, TN. For years now, I have expressed my desire to paint pottery, but either found no one to accompany me or felt ridiculous going in myself. So when I observed that Layth loves to paint and express himself artistically, I thought to myself, it's never too early to expose him to painting pottery. It was also my excuse to finally be able to paint pottery. And surprisingly, Layth really enjoyed it! I mention this, because when I asked some friends to accompany us, they thought I was ridiculous to take a two year old to go paint pottery. Instead, Layth found it exciting he was able to choose the piece he wanted to paint, the colors, and of course, many paint brushes to accompany the different colors. Once he had chosen his colors, his dog, and five paint brushes, he sat down, put his serious face on and went straight to work! Since they recommend you to coat the pottery with three layers of paint, it was the perfect opportunity for Layth to test his different colors. Rather than designating a different color to each part of the dog, i.e. his ears, eyes, tail, etc., Layth found it simpler to cover the dog in one coat, before proceeding to paint over the previous coat with a different color. Although I did not get to officially paint my own piece of pottery, it was fun going over Layth's missed spots and putting in the details to make his dog look more like a dog. Of course, as I was doing this, Layth decided to take the paint brushes and paint over his own shorts; thankfully, all the paints were washable... one week later, we have an artistic, colorful dog to bring back home to show Chafeek!

Shrimp in a Dates and Tamarind Sauce

Hello Everyone,
So after a short hiatus from blogging and venturing into cooking, I decided I would try my best to do a weekly post. This way I won't feel I've abandoned my newest project, and can at least allow myself one new recipe a week. Lately, what has captured my attention is Halloween! I love this time of the year, all the different pumpkin patches there is to visit, the scarecrows, and all the Halloween themed parties; it could not get any better. It also gives me many different activities to do with Layth rather than having to recycle between CMOM, the Memphis Zoo, and the Botanical Gardens. Speaking of which, I have been so busy trying to find a new babysitter for Layth that I feel all my afternoons spent at home have been occupied with interviewing babysitters, for just an occasional night out with the hubby or in this month's case, a Halloween party! And so, that has left little or no time to venture out and try a new recipe, which is why I choose to try a new marinade, Stonehouse 27: dates and tamarind cooking sauce I purchased from the local grocery store, Miss Cordelias. It was located under the " Local Favorites" isle when I decided it would be something new, quick and simple. All I needed to do was grill whatever it was I was going to marinade in a skillet over medium heat and then reduce the heat, add the marinade, and allow it to simmer. So when I had gotten home I scanned the freezer, took out some shrimp that were ready to be cooked i.e. tails already off, took out a skillet and some olive oil. I grilled the shrimp over medium heat until they were no longer pink and more of a reddish color before adding the marinade and covering the mixture. I was a bit skeptical of how well it would taste, particularly since I had never tasted the marinade. And within fifteen minutes, I was pleasantly surprised, it tasted delicious. Chafeek preferred to eat the shrimp over rice, Layth decided the marinade was too spicy for his liking, and just I liked the shrimp ala carte. It was/is the perfect idea if I am ever in a hurry again, I just need to go Miss Cordelia's and stock up!

Rosemary Herb Chicken

Hello Everyone,
I know it has been a while since my last post, so I promise to make this worth your reading pleasure. Since I just really began cooking and venturing into new recipes, I decided today I would try something different, something the boys will actually eat. Normally, when I find myself with little time to prepare dinner or flat out tired, I will take a couple of chicken breasts from the freezer and marinate them in either a balsamic vinegar or Italian dressing for a few hours before putting them in the oven for forty five minutes. But quite frankly, I think the boys were getting tired of eating a plain marinated chicken breast. For instance, when Chafeek and I went out to watch " Memphis" the musical, I had prepared Layth a slice of chicken with fruit for dinner. I figured I would do something simple so when it came time for his babysitter, Tabitha, to feed him, he would not give her much of a battle. So when it came time for an intermission, I had the chance to call Tabitha and get an update on Layth, she informed he was simply picking at his chicken, ate all his fruit and was munching on snacks. It was then when I realized I needed to get a bit innovative with my chicken.
Yesterday, as I was taking some chicken breasts from the freezer, I decided I would search the web for a recipe that was quick yet appetizing when I stumbled upon this recipe. It was such a success both Layth and Chafeek ate it without cringing and actually enjoyed it!


Ingredients:
  • 2 Skinless Boneless Chicken Breasts
  • 2 clove garlic cloves ( chopped)
  • 1tbsp of lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon of pepper
  • 2tbsp of dried rosemary
Directions:
  1. 1. Preheat oven to 375 degrees F (190 degrees C).
  2. Cover the chicken breasts with garlic, then sprinkle with rosemary, lemon juice, and salt and pepper to taste. Place in a 9x13 inch baking dish and bake in the preheated oven for 25 minutes or until done and juices run clear (baking time will depend on the thickness of your chicken breasts).

Potty Training Layth ( The Little Lion)

Hello Everyone,
So it has been a while since my last post, but these past few weeks have been a bit hectic between going through closets trying to figure what is going with us to Palo Alto and what is being donated to trying to explore as much of the Memphis as can. But what really has been occupying my time is trying to potty train Layth. I am not going to lie and say it has been easy, but it is definitely easier than I anticipated. Since the moment Layth could roll over, diaper changing has been a battle. It would usually consist of me distracting him with a toy in his hand to prevent him from rolling over, to changing his diapers standing up. In other words, the moment Layth would see a diaper, he had to figure some way to escape it. It was then at 19 months we decided to make the transition to pull-ups, and while he treated them much like a diaper, he did not resist as much. It also convenient since they are not made to absorb as much as a diaper, the moment they would leak, he'd run to me and say " mommy" indicating to me he was beginning to make the transition. So at 26 months we made the second transition from pull ups to underwear. I believe we were both excited about this, because it meant no more having to chase Layth to change him and Layth got to choose underwear in his favorite Toy Story characters. In addition to it being easier, Layth looked adorable with his " wrestler butt." However, with underwear came tons of laundry, packing the baby bag with three or four changes of clothing, timing his potty breaks, controlling his liquid intake and reading his body expressions to indicate whether or not he needed to go potty. At first, Layth would tell me after he had an accident and would resist being put on the toilet out of fear of falling in, but it was still progression. Although we are not officially potty trained, because we still use pull ups at night and have an occasional accident, he lets me know " mommy peepee." The only problem is if I do not take him instantly to the potty, it results in an accident; but his teachers at school say that he loves using the potty and has been using it regularly. And so, the process continues.

YAY for Five Guys!!!

Hi Everyone,
So I am not one to support fast food chains except if it's Chick Fil-A or Subway, but I cannot resist promoting Memphis' newest chain: Five Guys Burger. Ever since I had their burgers in Washington D.C. a few years back, I have been a devoted fan. But unfortunately, no place I lived had a branch, that was until now!! Recently, Layth and I went to go to Sugar Plum Consignments to drop off a lot of gently loved designer bags when we stopped for lunch at Five Guys. Layth had already been exposed to their great burgers from his visits to Panama City Beach, and loves their kosher hot dogs and fries. I also love that they have kosher products, because Chafeek does not have to resort to eating just fries or a veggie burger. So when Layth and I decided to stop there at 11:45 today, we were not anticipating the ridiculously long lunch line that lead to outside the door, but it was definitely worth the wait. Even though Layth fell asleep before he could enjoy his kosher hot dog with just ketchup, it did not stop him from nibbling on their delicious fries ( the cashier allowed us to have the fries first since they were ready, and could see Layth getting excited!). And now, we have my new favorite Germantown lunch joint ( sorry Swankys, but you served us well for the past 4 years!).

Baking Brownie Cookie Bars

Hi Everyone!!!
The other day, Layth and I were craving brownies while shopping for his school supplies, when he stumbled upon Betty Crocker Brownie Cookie Mix; the box made them look so enticing. But of course, everything looks good when you're fasting. It also helped they had two education box tops, which would benefit his school the next day. And so, we bought them. Of course, we did not get to making them until the next day because we were going out for dinner that day. However, when it came to making them the next day Layth could not be more excited!! Immediately, when he saw me taking out the mixing bowls, Layth began saying, " Cookies, Cupcake": his two favorite things in the world! And when I reassured him we were making brownies, immediately he ran to the drawer where I keep my wooden spoons and grabbed one for himself. Of course, I had to grab one for myself and set those aside while I collected the other ingredients: flour, eggs, water and vegetable oil. With all the excitement, I forgot to add the water ( thankfully, it did not impact the taste, just made it harder to mix) and we began adding them into the mixing bowl. Layth, on the other hand, could not resist mixing along with me and dipping his finger every now and then into the batter to get a taste of the sweet chocolate. The instructions then called for us to mix the cookie mix separately and then pour the two mixtures on top of each other. For one mix I omitted the water, for the other one I added too much water ( I added 1/3 cup of water instead of 1/3 teaspoon) again, it did not impact the taste. I personally think it just balanced out the two mixes. The cookie mix, however, did not intrigue Layth so much as the brownie mix. So as I was mixing, Layth was taking his wooden spoon and taking tastes of the brownie batter. And as a result, my counter tops and little boy were covered in chocolate. Normally, I would be freaking out trying to clean the mess, I just laughed. It was simply precious! Layth, too, joined in with the laughter!!
Once we composed ourselves, and I cleaned up Layth, I went to grab my baking pan, where I saw Layth running to the drawer where I keep my oven mitts, grabbing two, and putting them on his own hands. As cute as he looked, it was hard telling him he could not be near the oven... while the brownie cookie bars tasted as great as packaged brownies can taste, the true delight was baking with my little lion!

A New Twist on Pillsbury Cookie Dough

Hey Ya'll,
So I recently discovered a cheap and easy alternative to making a homemade dessert, Pillsbury cookie cake topped with Vanilla Haagen-Dazs Ice Cream. I know it sounds simple, but I promise you it tastes delicious!! We were all fasting one day, and decided we would go out for dessert after Iftaar ( breaking of the fast) when we all unanimously agreed to stay at home. And instead, we brought the dessert to us: Coconut Cream Pies, Pillsbury Brownie Bites and Oreos. While all these desserts looked enticing, we insisted upon making something homemade when we decided to make a cookie cake. The secret to this dessert is to cut the cake immediately after removing it from the oven, so the dough is still warm and moist, and topping it with a scoop of Vanilla Haagen-Dazs. We also decided to use two packages of the Pillsbury Cookie Dough to create an even thicker, more chocolaty taste, making the dessert twice as delicious!! So if you're looking for a simple dessert, this definitely is a top choice.

Honey Lemon Grilled Chicken

Hello Everyone,
Since Ramadan has started I have been on the hunt for good, simple recipes that do not require too much preparation, which means I have been recycling my simple recipes. Even though we are only eight days into Ramadan, I feel trying to come with things to cook has been just as exhausting as fasting itself. I want a recipe that's quick, but filling, something worth the wait of having to give up food for ten hours, and finding some, have been difficult. They usually require preparation the night before, or 30-45 minute preparation time, which can be so frustrating sometimes, because you cannot taste whether or not you have the right spices or not. So during my search to find new recipes I stumbled upon this one while reading People magazine. It sounded so intriguing I could not resist trying to make it. I'll be having it tonight, so I can't give you my guarantee on it, but it looks promising!!

Ingredients:


  • juice and zest of three lemons

  • 1/3 cup of olive oil

  • 1 tsp of oregano

  • 1 tbsp of Dijon mustard

  • 2 tbsp of honey, plus a drizzle

  • 1/2 cup of finely chopped onions

  • 1 clove of garlic peeled and smashed

  • 1/2 tsp of salt

  • 1/2 tsp of black ground pepper

  • 4 skinless, boneless chicken halves or 2 lbs

  • Grilled lemon wedges ( just for garnish)

Directions:


1. In a small bowl, mix together lemon juize, zest, olive oil and oregano, dijon mustard, honey, onion, garlic, salt and pepper. Set aside 1/4 cup of the mixture for basting, place the chicken into the bowl, cover and marinate for at least 30 minutes in the fridge.


2. Place the chicken onto the grill for medium heat and allow it to cook for 6-8 minutes on each side. This is where I took a short cut, and placed it on my George Foreman for 10-12 minutes before marinating the chicken once again.


3. I then intend on drizzling honey onto the chicken and decorating the plate with the lemon wedges!

Clearing Out My Closet

Hello Everyone,
It's that time of the year again, when I have to go through my closets and determine what stays and what does not. And in this economy, it's best I keep as much as possible to avoid spending any more money. However, with us moving to San Francisco in June, I need to start clearing now!! They charge by the pound to move up to California, and even then, we'll be downgrading from a house to an apartment. I took living in Memphis for granted, I will miss having a two story house, not having to worry about traffic and driving only 40-50 minutes at the most to get from place to place. And so, the closet cleaning must take place. So far, I have found a gently used pair of GAP bootleg jeans, a gently used collared Express button down shirt, a brand new pair of seven for all mankind jeans, a brand new pair of Gap corduroy capris and an awesome pair of sandals I'd completely forgotten about. I am planning on taking them to a consignment shop tomorrow, but we'll see how much I get for them. I keep telling myself I will get rid of them, but if I end up getting pennies for them I might just be tempted to keep them.

Heart for Art Studio


Hello Everyone,
As many of you know my birthday is on August 4th, and for those who do not know, I share this day with my fabulous sister who was born on my 6th birthday. She is my ever lasting birthday gift ;) And so, I am always finding ways to plan birthday lunches or parties, something that will allow me to mentally pamper myself. Last year, my sister and I got massages and went out to dinner later with the family and ended the night with a chick flick. While some may find this a normal day, it was special, because I got to spend it with my sister ( something that rarely happens since we both left for college). And since my sister would be taking summer courses, I knew there would be no way we would be spending our birthdays together :( so I decided to venture out for something different. Initially, when summer came around I searched incessantly to enroll Layth into a summer art program, because I so desperately want him to be artistic when I stumbled upon Flicker Street Art Studio. While they offer summer course programs for children, and informal art training for adults, it was not what I was looking for ( Layth was too young). Through that search I stumbled upon ArtJAMN, a studio that allows you and some friends to come in and have a good time while you paint. And I was in love!! Immediately, I began planning this paint party where a bunch of us girls would gather around for a girls night out and paint. But when it came down to reserving, they were not really flexible with their dates. All my planning was wasted. When I thought of Facebook, people these days are always advertising their companies on there, and searched painting parties. From there, I learned about Heart for Art studio, and immediately contacted Donna ( the personal director/artist). Within hours she informed me of her program, the dates she had available, and was flexible with me bringing Layth. She even set him up with his own easel and crayons.
Two weeks later, my plans were a success. On Friday night, seven of us girls met up at Donna's house/studio and painted a pair of legs! While Donna had a prototype set out for us, it was our chance to get creative and implement our own ideas. Each of us took the brush and with each stroke our own talent and ideas came about. The husbands later would have their own take on what to do with the legs, but it was our chance for us to gather around and celebrate. So if anyone is looking for an activity that does not include dinner or a movie, I strongly recommend this studio!

Making My Own Cake: Pineapple Upside Down Cake






Hi Everyone,
I know it's been a while, but Layth i.e. the little lion and I were in Florida for nearly three weeks with my parents soaking up the sun. It felt almost bittersweet coming back. While the vacation cannot last forever, it was amazing while it lasted. During my trip I was alleviated from my kitchen duties, which felt like such a sigh of relief. I did not have to dictate my day around deciding what to cook, when I was going to cook and if I had the ingredients. However, this did not deter me from learning a few new recipes to take back home to Memphis with me. Among those recipes was a quick and economical way to make Pineapple Upside Down Cake. All you need is: Duncan Hines Pineapple Supreme Cake Mix, 3 large eggs, one cake pan, aluminum foil, water, vegetable oil and a can of sliced pineapples. First, you will place the aluminum foil along the cake pan, give it a spray of Bakers Joy to avoid sticking, and then proceed to opening the canned pineapples. The can usually comes with ten slices, so I would advise you to spread them evenly along the pan. Put the pan aside and proceed to making the cake as instructed to do so on the box. Once you are done mixing everything, take the pan, and spread it along the pineapples on the pan and place in the oven as directed. Considering how clumsy I am, I did not attempt to turn the pan over but still tasted amazing!

Still Lusting....

Ever since I stumbled upon these boots while visiting my in laws in Phoenix last November, I cannot stop thinking about them. While shopping the Betsey Johnson store in search for a new purse for my sister, I saw the sales associate wearing these fabulous boots: their are part boot, part open toe heel was just screaming " look at me." Being a shoe fiend, the last thing I needed was a pair of black boots, so I turned my attention away from them. When the sales associate stopped me in mid sentence and informed they also came in baby pink, and immediately I was drawn in. And when I tried them on, they were both so comfortable and chic, it was almost fate instructing me to buy them. The price tag, however, was not so appealing, $199. I kept trying to justify to myself the purchase, but it always went back to my simple desire to have them. This was November, and I would be back in March, so I was sure they would be on sale then. I went back in April only to see they were still fully priced, and so, I thought to myself, " Who wears boots in Phoenix in the Spring?!" But then I remembered how cute they were, and answered my own question. Ever since then, I have been on this incessant search looking for a place or website that would sell the boot for a better price. The best I could find was $135, and was about to type in my credit card number when I decided to search one last time. At 11 pm I typed in my search, " Betsey Johnson Wolford Bootie," only to find that Amazon.com was selling them for $70. An independent seller was selling them insisting they did not like the way they fit her feet and Betsey Johnson did not allow her to return them. And now seven months later, they will be mine in 7-10 days.

For four years now, locals have been regaling about " Paulettes" even adding that it was featured in Tom Cruise's movie, " The Firm" which made it that more intriguing. And so, when my Father's Day plans for brunch at the Peabody was dampened due to my husbands' work schedule, I decided to take my chances and make a reservation. Fully aware, it would be almost impossible to find a reservation anywhere the morning of, I decided to call at 7:30, although the restaurant itself does not open until 10. Luckily, the hostess picked up and informed us of a cancelation at 11. Now, it was matter of Chafeek finishing rounding in time enough and not receiving any consults. At 10:30 am, as I was getting Layth ready and finishing applying my makeup, Chafeek comes walking in through the front door asking me what are the plans. I told him, " we're headed to Paulettes, no questions asked." It also helped that they recently relocated to Harbor Town, making it just five minutes away. He agreed, and quickly changed out of his scrubs. And then, when I thought we were ready to head out, his pager went off, making me so nervous it was a consult. Thankfully, it was not urgent.
Upon arriving at Paulettes, in separate cars of course should he summoned to the hospital, Layth and I would not be stranded. Thankfully, the restaurant was not busy. Immediately, we took our seats, and Layth grabbed his book and we were set to order. Taking Chafeek's advice and ordering the " Eggs Oscar with the French Onion Soup," we were ready to dine. And I must admit, his choice was exquisite! Even Layth could not stop himself from wanting more. I did not think poached eggs on an English Muffin with crab meat would appeal to a 23 month old, but his appetite proved otherwise! It then came time dessert and immediately I knew what I wanted, the cranberry and chocolate bread pudding ( a Father's Day special). And within a few bites, it was gone proving the rumors about Paulettes to be true: AMAZING!!

Three cheese and Tomato Tortellini

Hello Readers,
So, I am at it again, searching for new recipes to feed my boys and avoid the towering cholesterol levels found in restaurant food and decided to improvise upon one I found on cooks.com. Normally, I would buy a pack of Buitoni three cheese tortellini and boil the pasta and then just add the instant Buitoni pesto sauce found in the same dairy section, but recently Chafeek expressed his dislike for it. And so, I had to find a new way to cook tortellini. After searching all over the Internet, I stumbled upon one that looked enticing, but it called for 45 minute preparation time and 30 minutes of cooking time. I only had 30 minutes to cook and prepare before I had to pick up Layth at 12. Given the alluded time I had to cook, I decided to use my own sense of taste and conjure up something that would at least be edible. I was worried it would just be one disastrous science experiment, but thankfully, the boys the liked it. Well...at least Chafeek liked it!

Ingredients:
  • 1 Package of Buitoni Three Cheese Tortellini
  • 1 Package of Organic Cherry Tomatoes
  • 1/4 teaspoon of Basil
  • 1/4 teaspoon of Oregano
  • 1/2 teaspoon of Italian Seasoning
  • 2 Tablespoons of Extra Virgin Olive Oil
  • 1 can of Hunts Diced Garlic Tomatoes
Preparation:
First, you should prepare the pasta as you normally would: Bring to a boil, add the pasta and cook for 11-13 minutes or until the pasta is tender. I usually add a teaspoon of salt to avoid the pasta from sticking. Meanwhile, cut the cherry tomatoes into small circular pieces and add them into a skillet. Once you have added the cherry tomatoes, empty the diced tomatoes and add them as well as the spices and allow them to skillet until they are soft in tender. I allowed my nose to be the determinant factor, once I could the smell the sweet aroma of spices, I knew the sauce was just about done. It probably took no more than fifteen minutes. As they skillet, drain the pasta and stir in the two tablespoons of the Extra Virgin Olive Oil. The sauce should be done by then, and just add that into the pasta and mix in. I promise you, it does taste good!

Fassoliya- Layth's new favorite dish!

Hello Everyone,
Yesterday, I decided to prepare one of the first dishes I learned to make since becoming " Layth's mom" that being fasooliya. In other words, stewed beef with green beans marinated in tomato sauce. Normally, this dish is made to be served with rice, but my little lion, decided to eat it as a soup. He couldn't get enough of the soft green beans, which did not surprise me since he loved pureed green beans as an infant. A dish I expected to last us the course of two days, ended up finishing that evening! I was pleased, but a bit annoyed, because it meant I had to cook today! Since many of you already know how to prepare the dish, I am just going to simplify the preparation.

Ingredients:
  • 1 can of Hunts Tomato Sauce
  • 1 Vegetable Bullion Cube
  • 1 pack of frozen cut green beans
  • 1 pound of stewed beef
  • 1/2 teaspoon of salt
  • 1/4 teas of pepper
  • 3-4 cups of water ( enough to cover the meat)
Preparation:
First, you will need to add the meat and pour enough water to cover the meat. Bring the meat to a boil, which usually takes 10-15 minutes. Upon boiling, reduce the heat to medium and allow it to sit for 45 minutes ( this gives time for the meat to soften). The key to this recipe is to make both your meat and vegetables soft. As your waiting, this gives you time to do other things, such as, read a book or in my case, play with Layth!!
Thirty minutes later, add the vegetables, the tomato sauce, and the spices, and allow it to sit for thirty minutes. Depending upon the time, I usually bring everything to a boil before reducing the heat to medium. But today, I had to shave fifteen minutes off the recipe because I started it late, and just kept everything on medium. Worried it would not taste as good, I had my own apprehensions. However, Layth had three servings of the stew, and that is when I knew those extra fifteen minutes did not matter.

April Showers Bring May Flowers

Good Afternoon!!
I am in such a happy mood today, I can't help but want to spread the joy. After a week of constant tornado threats and severe thunderstorms, the sun finally showed itself today. It felt almost uplifting, because the dark and grey skies were beginning to dampen my mood. The tornado sirens were becoming all too familiar, watching the weather reports was simply a waste of time because they were all reporting the same thing, and leaving the house felt like a burden. But today, as I was picking up Layth, the sun began to show itself. And soon, by the time I had reached his school, it was no longer hiding behind the trees. I could not wait to take Layth out to the botanical gardens and spend the day in My BIG Backyard, because the Children's Museum was becoming a bit too repetitive. As soon as I walked into the building, there was Layth coming out to greet me with giant little arms. It was nice to see he was not napping, because I had big plans in store for him. Soon Layth jumped into my arms, and we got into the car headed for the botanical gardens when Chafeek phoned me and saying he will be coming home for lunch. As a result, our plans were delayed. But any opportunity for Layth to see Chafeek before 7:30 pm is always a treat, so we headed home.
After an hour at home, Layth pulled my hand toward the front door indicating he wanted to go out. And so, we were out. But rather than heading to the botanical gardens, we took another detour, to the zoo. As we were passing by it, Layth began pointing with his finger saying " this, this" indicating he would rather go there and once we drove into the parking lot, Layth began laughing hysterically implying he knew where we were at....
Two hours later, as we were heading to the other side of the zoo to see the wolves I see Layth's head tilted to the side indicating he had fallen asleep. My little man had exhausted himself between playing on the playground and visiting the animals. He, too, was happy to see the sun!

Bistro 110

Hello Readers,
After being absent for week, I'm back! The boys and I were spending the week in my beloved Chicago for Chafeek's ENT conference. And despite being there for business, I managed to have tons of fun! Layth, too, could not have asked for a better week: spending his days with mommy, his afternoons sightseeing between various museums and dinning with fellow residents. I do not know of many 23 month olds who would pass up an opportunity of being the center of attention; Layth certainly did not. He also enjoyed all the dining we did; particularly, Bistro 110. Speaking of Bistro 110, I remember it being my guilty pleasure after finishing my afternoon Water Tower classes. So when my friend Sanaz suggested it, I quickly agreed. And having not been there for five years, it certainly did not disappoint. I thought it was so good, I suggested it to my fellow residents who were looking for place to dine near Water Tower for lunch. However, I was so worried whether Layth would enjoy it, but my worries were soon over when he attacked his meal of Macaroni and Cheese. His child size portion was equal to the size of my adult lunch salad. In other words, their meals were not very big, but still too big for Layth. And so, as a result, I was able to enjoy a few bites myself. The cheese was so rich, but not too heavy, I did not feel guilty biting into it. I did not feel I was indulging in processed cheese as most macaroni and cheese dishes make you feel. Instead it resembled what you would see in Bethenny Frankel's, " Skinny Girl" cookbook; it was exquisite. So when the next time an opportunity comes knocking for us to go to Chicago, I'm definitely taking Chafeek there.

We're Loving Fruits!!

For my few readers out there, a very big hello!!! Despite feeling awful, I have decided that I am going to greet today with wide open arms and leave it with a great big smile on my face. However, that is kind of difficult when everyone in the house is sick!! I thought an apple a day, keeps the doctor away? Speaking of which, we have substituted cookies and ice cream for tons and tons of fruits; particularly, Granny Smith apples. Layth loves the sourness these green apples contain, and cannot get enough of them! I am so happy, he loves fruits. I was so worried he would inherit my sweet tooth, which he has, but still has a taste for the healthy stuff. Apples, Plums, Grapes, Blueberries, he's been enjoying it all. And now, we can add mangos to the list! As his mom, I love mangos, but I never thought of introducing it to him. It did not seem like your typical fruit to introduce to a toddler;but when his teacher, Ms Marie informed me had some at snack time and loved it, I went straight to Fresh Market and bought some. The boys finished it within minutes!! Unfortunately, all this fruit has not kept the illnesses caught at school from following him home. Currently, the three of us are battling some type of cold symptom Layth brought home, something I knew would happen. I just did not expect it to happen after just two and a half weeks! Nonetheless, I am just happy Layth is eating fruits!!!

When does it get easier?



It's Monday, and I'm not looking forward to sending Layth to school. I'm not looking forward to seeing him cry the moment we enter the building, reaching his hands towards me crying " no" or mumbling between his tears " mama, mama", but I know it's just what I have to go through until he gets adjusted; particularly, since he loves kids! This morning as we began to enter the building, Layth did not cry, which made me believe we wouldn't have to go through the whole ordeal of separation. Once we entered the building, we made our way straight into the classroom, and opened the door. The moment the door opened, the tears began. I went to put him down on the rocking horse in the classroom to help alleviate his own anxiety, when he ran straight to Ms. Marie with open arms indicating he wanted to be held. I wanted to cry myself when I saw him running into the arms of Ms. Marie. Immediately, she held him and indicated for me to leave such that it would be easier upon Layth. I opened the back door to see him still sitting in her lap crying when the headmaster came by and told me, " mondays are just hard."
All throughout the car ride I kept thinking to myself, is this intervention really necessary, should I just wait until he's two and send him to Mother's Day Out twice a week, when I remembered how much he has picked up in the few short days that includes his new favorite word, "nooo." Still feeling a little shaken up, I decide to pay some bills online to shake my mind off Layth being in school, when I saw these pictures awaiting in my inbox, making me feel so much better!

Plums, We All Scream For Plums!!!!

Hello Readers,
Today I decided to shy away from Layth's usual breakfast of one hard- boiled egg without the yolk, and chose fruit instead, a plum to be exact. And, he loved it!!! Yesterday, while at Fresh Market I saw the season for plums had begun, and being they are my favorite fruit, I decided to stock up!!! I've never had such difficulty finding plums as I have experienced here in Memphis. Apparently, they are only sold at Whole Foods, Fresh Market and/or Farmers Markets. So, when I saw them, I ran to them and filled a bags worth of them. And being that Layth loves fruits, I decided to introduce him to plums. At first, he was a bit reluctant as most kids are at his age when introduced to new foods, but when I allowed him to hold the fork, he went to town with them. Initially, I had cut up half a plum, but when I saw he'd finished his serving and was asking for more, I decided to cut up the remaining plum. Not only did he indulge in the sweet fruit, he was asking for more!! I couldn't be happier that he too, loves my favorite fruit!!!

Grilled Chicken Caesar Salad

Hello Everyone,
Today I discovered the easiest way to make a healthy homemade grilled chicken Caesar salad without spending hours laboring in the kitchen, and the boys loved it! Although I do not categorize myself as a " working mom", I felt my schedule today resembled one. From the moment I woke up this morning, I have been on the go between dropping Layth at school, conducting errands for the hubby, meeting with some friends for a coffee date and picking Layth up and taking him to his doctors' appointment; I did not have much time to spend at home making a home cooked meal. But I was determined, we would eat at home. So, as Layth and I were driving home, I remembered my husband mentioning he's never had a grilled chicken salad of any sort when a light bulb switched on in my head. I stopped at the corner market grabbed some Bleu cheese, A Fresh Market Express Caesar Lite Kit, and some Italian Dressing. It also helped I already had some boneless grilled chicken breast thawing in case I did have time to conjure up something. Ten minutes later, we arrive home and Layth runs straight for his recliner and grabs a book giving me more than enough time to put the groceries in the fridge, grab a large Ziploc freezer bag, fill it up half way with Italian Dressing and add in two grilled chicken breasts. I figured this would be the easiest way to marinate the chicken while I changed Layth and took him to the playground. Ninety minutes later, Layth and I return home from running/playing on the playground, and it's time to start cooking....fifteen minutes later, dinner is served!

Ingredients:
  • One Large Ziploc Freezer Bag
  • Hidden Valley Italian Dressing
  • Two Boneless Skinless Chicken Breasts
  • One Fresh Express Caesar Lite Kit ( includes: lettuce, dressing, and garlic baked croutons)
  • One Tb of Fresh Bleu Cheese
  • Skillet/George Foreman Grill
Directions:
Depending upon how much time you have to prepare the meal, I would advise grilling the chicken in a skillet. By first heating a tablespoon of oil over medium heat and adding the chicken breasts when appropriate. Then pulling out the chicken when you feel it is brown enough to your liking. Since I only had twenty minutes, I put the chicken breasts on my George Foreman Grill making them done in just ten minutes. Once the chicken breasts were done, I pulled them off the grill and cut them into strips. Meanwhile as they cooled off, I opened the Fresh Express Kit and added both the lettuce and croutons, I held off on adding the dressing until the very end. I then added the pieces of chicken, and took the blue cheese sprinkling it throughout the salad. Once all the ingredients were in, I took the dressing and mixed it within the salad, covering every inch of it, and the salad was ready to serve.

Layth's 2nd Day of School

I thought it would get easier on his second day especially since Chafeek was accompanying me this time, but it was just as difficult. Layth needed pull ups, and I had completely forgotten to purchase some between now and Monday, so I sent Chafeek out to Walgreens as I got Layth ready for school. As we both pulled up to the parking lot, we each waited for Layth to slide down out of his car seat and out of the car. I thought he would instantly run through the wooden fence and into the school building, but instead he pulled his hand out indicating he wanted me to hold his hand and the other to Chafeek. I nearly cried. And if that was not hard enough, he would not leave Chafeek's side once we got into his classroom. He kept running back to him. Then when Layth was not paying any attention Chafeek slowly left the classroom leaving me to say, " goodbye" to Layth. Luckily, a puzzle caught his attention and I, too was able to leave the classroom. And just as we were making our way to our respective cars, Chafeek says, " I don't know about this". Not knowing how to respond, I tell him, " let's see how it goes on Friday, and if we still feel uncomfortable, we'll stop it." And all throughout breakfast at Cafe Eclectic we kept deliberating whether or not we shall continue with the Montessori program or wait until he's two and send him to the Mother's Day Out Program provided by the local mosque. We came to the resolution we will try it out for this month, three full days a week, and see if Layth is progressing. Soon it was time to pick Layth up, and Chafeek insisted he do it, because he wanted to see Layth. I told him, " that was fine, and I'll meet you at the zoo." As I am driving to the zoo, Chafeek calls me telling me how Layth came running toward him with open arms. I am almost jealous, I didn't get to witness it myself....

It's 11:37 am and I'm out!!

As I mentioned in my previous post, it was really hard sending Layth to school, so when the clock read 11:37 I was on my out to pick him up. Chafeek called me at 11:40 asking how I'm taking it, and I told him I am on my way to pick him up. Of course, we laughed at how I was anxiously watching the clock until it was time to pick up our dear Layth. On my way, I got caught in a middle of storm and was worried I would not make it. I was praying that I make it safely to his school in the midst of the storm, because there really wasn't any place I could stop and wait for the storm to pass. Twenty five minutes later, I arrive to his school only to hear the tornado sirens going off. I run into the school to see Headmaster Angela, gathering the older kids and instructing them to bend their knees underneath their heads and hide under the cafeteria tables. Too busy to pay any attention to me to bring out Layth, I go ahead and make my way forward to Layth's classroom. As soon as I opened the door, there was Layth running to me with open arms. I almost cried at the sight of his excitement to see me. Meanwhile, the tornado sirens were still going off. Worried I'd be endangering Layth's life if I were to proceed driving in the storm, together we waited with the rest of the students for the storm to pass. Thirty minutes later, we were cleared to leave the building. Not bad, for Layth's first day!

The Saddest Day Thus Far



After months of researching and deliberating, the day had finally come to send my sweet Layth to school. Ideally, I wanted to send him to the Maria Montessori School which is just 1.75 miles away, but their waiting list was until March of 2011 when I began researching in October of 2010. I had found an alternate Montessori school in Midtown which goes by the name of Evergreen Montessori School, but didn't know of anyone who had sent their kids there. As a result, I had my reservations of sending Layth there; although, he seemed to fit right in when we went for a trial. Little did I know then, it would be the school Layth would eventually attend.
For years, residents and fellows alike had been regaling about the wonderful environment provided by the Maria Montessori School, which made it the obvious choice when it came down to send Layth to school. However, the tuition was a bit pricy, which made me reluctant to aggressively seek that Layth's name be on the waiting list. But when I found out, they had a half day option, I jumped on the opportunity of getting his name on the waiting list and researching the school and its teachers. The time is now November, and still the waiting list won't open until March. So, I thought to myself, " why not wait?". There was no harm in keeping Layth at home with me for a few more months, when in reality, it was the best decision ever made!! I love spending time with Layth!!! March came and went, and still Maria Montessori didn't have any openings. At this point, I decided to call back Evergreen Montessori to see if they still had an opening for Layth, and luckily, they had just one spot available. And so, today at 9 am I dropped off Layth at school. Expecting Layth to cry and cling on to me, he ran into the classroom and began playing with the toys, assuring me he was going to be fine. I, on the other hand, didn't take it so smoothly...the moment, I got into the car, my tears began building up only to be interrupted by Mercedes calling me wondering if I am still bringing my car in. Thankfully, I was able to compose myself and answer the phone. If it weren't for that phone call, I don't think I would have left the parking lot...now, I am anxiously awaiting until 12 to go pick him up. I thought I would get things done today while he was at school, and instead I'm eyeing the clock much like a predator watches his prey until it's 11:30 to pick him up.

The Great Sale



Hello Everyone,
For those of you who are following my blog, I do not know if you recall my Monday post about finding all these hidden treasures in my garage, if not, I am mentioning it now! After careful consideration, I have decided that there is no room in any of my closets for these items, and will be selling them on eBAY. As of right now, I have clothes, shoes, bags, and accessories occupying three different closets in the house, and still feel they are overflowing. And since I promised Chafeek I would be emptying some of these closets soon, I can't think of a better way to downsize. Spinach Linguine in Pesto and Tomato Sauce

Spinach Linguine in Pesto and Tomato Sauce and Fresh Mozzarella


After being absent from my blog for while, I feel like I have become obsessed with trying to find new entries and constantly keeping it updated! Or maybe, I am actually enjoying spending time in the kitchen ( something I never thought would happen!). Speaking of being in the kitchen, yesterday I was determined to mimic a recipe I had tasted at a restaurant on my recent trip to Panama City based simply upon taste. I know you must be thinking I am crazy, and there is no way it will actually come out successful, but much to my surprise, it did! So, if you're willing to take the chance on my recipe, here it is:

Ingredients:
  • De Cecco Linguine with Spinach
  • Buitoni Pesto with Basil Sauce
  • 1 lb of Fresh Mozzarella Cheese
  • One package of Organic Cherry Tomatoes
  • Olive Oil with Pesto and Basil ( optional)
Preparations:
( cooking time: 40 minutes, serves 2-4 people)

I would first begin my preparing the pasta, because you can chop up the mozzarella cheese and tomatoes as you wait for the pasta to boil. So, begin preparing the pasta as you usually would by pouring 6 quarts of water in a pot per one pound of pasta on high and adding salt into the water to prevent the noodles from sticking. Meanwhile, as the water boils, chop up the tomatoes into small circular pieces keeping all the juices and seeds ( these will later help in preserving the tomato flavor when you get around to frying them). At this point the water should be boiling, so add the pasta and allow it to cook for eleven minutes uncovered. I allowed it to sit for 13 minutes just because I prefer softer noodles. If you choose to do this, make sure to be careful because overcooking pasta noodles can lead them to being sticky. As you wait for the pasta to boil, pour about two teaspoons of oil into a skillet, and allow it to heat. This should take no more than five minutes. Once you feel the oil has reached an appropriate heat, pour in the tomatoes with the seeds and heat for about 7 minutes. Or, at least until you feel the tomatoes soft enough, almost resembling a puree. No seasonings need to be added, because between the oil, and the natural flavor of the tomatoes, the tomatoes will produce their own flavor. By this time, your noodles should be ready, so drain the noodles but return them to the pot. The heat from the pot should allow the pesto sauce to melt into the noodles. I used about a tablespoon of the pesto sauce and mixed it throughout the noodles with a wooden spoon. Since I am not a huge fan of pesto sauce, I made sure not use it in excess. Once the pesto sauce is spread throughout the noodles, drain the tomatoes with the oil and seeds and spread evenly throughout the noodles. Depending upon when you choose to serve the dish, I would hold off on putting the mozzarella cheese until you're ready to serve it. But if you're making it to serve immediately, cut the mozzarella into small cubes, enough to serve as a garnish and spread evenly on top of the noodles. Lastly, drizzle with a teaspoon of oil for that authentic Italian flavor ( this is strictly optional). And, the recipe is completed!

Hidden Treasure Box: My Garage

As children we all fantasize about finding a hidden treasure box enclosed with tons of jewels and gold that will make us forever rich, but then we grow up and realize these ideas of grandeur are just fantasies. But today, that dream somewhat came true when I decided to clean out of my garage! After years of collecting shopping bags, boxes, and just plain junk, I decided to take ten minutes to clean it all up. Layth was enjoying walking up and down the ramps between my garage and the neighbors, I thought this would be the optimal time to do some spring cleaning. This would also buy Layth some time to utilize some of his repressed energy before we began our day of running errands. As I began cleaning the shopping bags I once thought were empty, the treasure began to present itself. And as more and more things began to appear, the more intrigued I was to clean some more. But after twenty minutes, Layth was bored and I was done cleaning!!

" Pump It Up"

Ever since becoming " Layth's Mom" , I have been invited to the new age Chuck E. Cheese, " Pump It Up," which replaces mechanical toys with inflatable toys, hence why their motto is " the inflatable playground." It's no wonder they are becoming a national hit among moms and children alike. I will have to admit my favorite ride there is the giant inflatable slide. Yes, I am guilty of enjoying the inflatable rides with Layth, since he is still too young to tackle them by himself. A typical toddler, he runs to the ride that most intrigues him, but has to make sure mommy is right behind him to accompany him. I love it too, because I get to enjoy spending time with Layth while releasing some of my child like energy. And what I love most is their designated toddler playtime that does not keep us relying on the next birthday invitation. However,being at my parents' house in Panama city, I must admit to preferring their facility more because it has all the rides enclosed in one large space rather than dividing them into two rooms ( making it easier to keep yours on your toddler). Nonetheless, if you're looking for something to do with your toddler, take them to " Pump it Up"!

Lime Blossom Photography



Hello Everyone,
I just wanted to share a local secret here in Memphis, and that is photographer, Shanda Lyman. A self taught photographer with a small company, Lime Blossom, on its way to blossoming, Shanda has amazing talent! For years now people have told me about her talents, mostly colleagues, and so, I thought to myself what better person to photograph than Layth!! At the time Layth was just 16 months, and still had his long shaggy hair, so it was just perfect for Shanda to capture on film. Of course, my photographer husband, Chafeek, learned of my actions and insisted he too, become involved within the photo shoot. And so, on one sunny day in November, we headed out to Arlington, TN to an abandoned cotton factory dressed in brown blazers and jeans to begin our photo shoot. Shanda insisted Chafeek intimidated her given his photography experience, but I was not worried: I had seen the work she had done for other friends of ours, and I was deeply satisfied. A few months later, I obtained the edited CD from Shanda, partly because we couldn't coordinate a meeting time, and I am in love with the photos she has taken. So, for all you Memphians who are in search of a photographer, I would greatly recommend Shanda!!

Lazy Day Pot Roast


Hello My Lovely Readers,
I am in such a good mood today, because I attempted a rather difficult task: making a pot roast, and it was successful! The whole purpose of this blog was to motivate me into becoming a better housewife and an even better mom! I knew I would never be "super mom" but I do want to be better than the average mom. Layth, who has been nothing but a joy since he's been born, deserves it! And so, I was determined to venture beyond my comfort recipes and make a pot roast!
For days now, I have been searching for a Kosher pot roast when I finally stumbled upon one, the recipe called for a 4 lb pot roast, but since we were just two and a half people, I could make due with the 2.25 lb chuck pot roast I found. The recipe also called for the pot roast to be in the crock pot for 6-8 hours, and starting it at 2pm, kind of worried me. However, the boys were willing to wait when it was completed at 8:45 pm after being in the crock pot for close to seven hours! And the best part was seeing Layth digging his hands into the crock pot to attack the gravy!

Ingredients:
  • One 2.25 lb Kosher chuck pot roast, trimmed of all its fat
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of freshly ground pepper
  • 4 large organic carrots, cut into thin pieces
  • 4 organic potatoes, cut into thin pieces
  • 1 yellow onion ( optional)
  • 2 bay leaves
  • 3 cups of water
  • 1/2 cup of vinegar
  • 3 tablespoons of butter
  • 3 tablespoons of all-purpose flour
  • Crock pot/slow cooker
Instructions:
1. Put the roast in the crock pot after sprinkling both sides with salt and pepper. Add the chopped carrots, potatoes, onion and bay leaves. Pour the water and vinegar over the meat and vegetables. Cover and cook on Low for 6-8 hours ( depending upon how soft you like your meat).
2. Transfer the meat and vegetables to a platter. And then, turn the cook onto " High" With the remaining liquid, you're going to make the very fattening gravy. First, you're going to mix the butter and flour until it becomes thick, which you will eventually transfer into the crock pot. Once the hot liquid, butter and flour are mixed together, wait until it becomes think and less clumpy before serving it as a gravy. And, the recipe is completed. It sounds a lot more complicated than it was to make it :)

In Search of the Perfect Ankle Boot



After days of searching online for them, I finally found my perfect ankle boot. And, it belongs to none other than the eccentric Betsey Johnson. I remember first trying them on at the end of October during a visit to Phoenix, and the store had just gotten them in that week. Priced at $140, I thought that was pretty reasonable. I was not about to allow the price deter me in purchasing these fabulous ankle boots. Sure, I have other ankle boots and there are plenty of other boots similar to them, but I loved these because they were surprisingly very comfortable. And having endured a knee injury a few years back, not every heel is compatible with my knee; therefore, comfort plays a large role! I also loved that they were open toe too, which does not just restrict me to wearing them only in the Winter months. They also work well for both Fall and Spring. I was moments away from pulling out my credit card and purchasing them when the sales associate told me if I come back in December, they will only be $50 or so, because no one has any use for boots here in Phoenix. And since, I have family in Phoenix I was sure to be back in December. It's always a trade off between spending Christmas or New Years in Phoenix. However, this year was different, I went to Egypt for a solid three weeks ( the most amazing time of my life before the riots began!). And so, my boots had to wait. February, came and gone, and still no boots! Luckily, Betsey Johnson was having their annual Winter clearance sale, which could not have been more perfect except that they did not have my size online. I thought it was not meant to be after searching endlessly for that few days, until my friend referred me to this website. Although I did find these gorgeous Alexander McQueen Gold Studded Ankle Boots, it was almost as though fate had directed her to inform me of this website and in a few days they shall be mine!

I haven't forgotten about you!


Hi Readers,
I know I haven't posted a new entry in a while, and have neglected my blog, but do not worry I haven't forgotten about it! I promise I have a lot more exciting entries in store for you guys. It's just I feel these past few weeks; particularly, the month of February, has been ridiculously busy! Although I am currently taking on the role of housewife/stay at home, it's still a lot more work than you expect! I feel as though I am more busy now than I was before when I was working as a third grade English teacher and going to school at night!, that might also be due to my adorable 20 month old, Layth. He keeps me busy, but every moment with him is simply precious! I would not give that up for anything this world has to offer. I am not sure if I will stay at home this long with my next child, so I am grateful for the opportunity I have been given. Well.... that's enough of me babbling, but just wanted to keep you guys informed!

A Modern Day She-ra

Hello Readers,
I don't know if any of you guys were fans of the Mattel produced cartoon She-ra: Princess of Power aka He-Man's twin sister, as a child, but seeing Florence of Florence and the Machine reminded me of the fictional princess. All Florence needs to update She-ra's modern day look is a metal crown, metal bracelets and a sword! If I were Givenchy I would not have even allowed her to represent me on the red carpet with this dress at Sunday's Grammys. I know this blog is dedicated to my journey in becoming Super Mom and the Perfect Wife, but I am allowed to digress from time to time. But honestly, between us girls, I find myself watching a lot more television than I use to be, which has hindered me from my mission to be a " Domestic Diva" hence why I have taken the time to comment upon Florence's choice of dress!

In the Wake of the Superbowl...Chipotle & Cheese Sliders

So, in the wake of the Superbowl, I thought I would post a recipe perfect for any diva hosting a party this Sunday. Luckily, I am relieved of having to prepare anything, since I am invited to a party at the lovely Ms. Asima's house. However, that is not going to stop me from venturing in finding new party recipes. A diva must always be on top of her game, so here's a recipe for the big one on Sunday. Go Steelers!!!!!



Chipotle and Cheese Sliders
Serving Size: 12 sandwiches


Ingredients:


  • 1 lb of Ground Beef

  • 1/2 Med. Onion, finely chopped

  • 3 Tbsp of Hunts Tomato Past

  • Salt and Pepper ( sprinkle to your taste)

  • 1 cup of Hellman's Mayonnaise

  • 2 Tbsp of Tabasco sauce
  • Olive Oil ( sprinkle to your liking)
  • 12 dinner rolls, halved
  • 12 leaves of lettuce baby greens
  • 3 medium vine tomatoes, cut into 1/2 inch pieces
  • 12 mini slices of Cheddar cheese, or 6 pieces halved

Preparation:

  1. In a medium bowl, you will need to combine the beef, onion and tomato paste. Since you will be using your hands to mix and a diva's hands are just to precious to smell of mixed meat, be sure and wear gloves. It also helps to preserve those beautiful manicured hands. And don't forget to mix 2 tsp of salt and 1/2 tsp of pepper along in with the meat.
  2. In a small bowl, mix the mayonnaise and Tabasco until you believe it is well mixed, and set aside until it's ready for use.
  3. Lightly toast the buns in either a toaster oven or oven whichever one you prefer. As you are doing that, cook the meat patties on medium heat in olive oil on a nonstick saute pan. If you're like me and need exact timings and measurements, I would say, about 2 minutes per side.
  4. Spoon the Tabasco mayo onto the bottom of each bun. And then, go about preparing a burger as you normally would, by placing the meat first, then garnishing it with tomatoes, cheese and lettuce. Once you have completed this, top the sandwich, and it's ready to serve!!! I would recommend topping each sandwich with a toothpick to prevent it from falling apart and getting all the grease and mayonnaise over your beautiful blouse.

* I wish I could take credit for this great recipe, but unfortunately, I improvised from George Duran's recipe. I guess, it takes a man to know what a real man likes, since he wrote a book all about the perfect Super Bowl snacks!
